Asian Americans make up just 7% of the U.S. population, but their cuisines are over-represented in the restaurant business: 12% of the nation’s restaurants serve Asian food of some kind, and 73% of all U.S. counties have at least one. Of those, 39% feature Chinese food, making Chinese take-out the best-selling ethnic food nationwide; the next most popular options are Japanese food (28%) and Thai food (11%).
