The population of Texas is 25,674,681 (2011 estimate) - non-Hispanic whites 45%, Hispanic/Latino 38%
The popular name is 'The Lone Star State'.
The state flower is the Bluebonnet; the state tree is the Pecan.
The state bird is the Mockingbird; the state animals are Armadillo & Longhorn Cattle.
There is now (2022) a movement to designate the state snake as Ted Cruz.
The Texas legislature proclaimed chili the official state food of the Lone Star State in 1977.

The official state song is "Texas, Our Texas" (adopted in 1929), although

Gulf, Colorado & Santa Fe Railway Company [1873-1965]
After much harassment from the railroads at Houston, the citizens of Galveston incorporated the GC&SF Railway on 28 May 1873; construction foundered at the Brazos River in late 1878; the railroad was reorganized in April 1879; construction continued to Fort Worth (roughly 350 miles) and then to Purcell, Indian Territory (total distance 517 miles); the rail line was absorbed by the AT&SF in March 1886, but retained a separate identity. In 1937, AT&SF purchased the Fort Worth & Rio Grande Railway from SLSF and immediately leased it to GC&SF. Railroad consolidation in the 1960s resulted in the disappearance of the GC&SF identity in 1965.
